Our story began long before the company itself. It started in Grandfather Celestino’s trattoria, where a small set of barrels rested quietly in the attic. That original core, passed down to Franco and now cared for by Francesco, has become the beating heart of Acetaia La Bonissima.
In the attics of our acetaia, time flows slowly. Natural temperature changes, the breath of the woods and the attentive hand of the family guide a transformation that cannot be rushed. Here, cooked grape must evolves year after year through barrels of oak, chestnut, mulberry, cherry, juniper and ash. Each wood gives its own character, each transfer adds depth, each top up renews the ancient balance of our casks.
We produce Traditional Balsamic Vinegar of Modena PDO and Balsamic Vinegar of Modena PGI following strict rules and a method that faithfully respects the Modenese tradition. We do not look for shortcuts. We look for authenticity, identity and the truth of our land, captured in a few dense, fragrant drops.
