An exceptionally long maturation, the result of more than half a century spent evolving inside our historic casks. The vinegar ages in small barrels of chestnut, oak, mulberry, juniper and cherry, following traditional annual transfers and top ups.
Tasting Notes
Naturally thick and velvety, Il Verde offers a deep, layered aromatic profile: hints of ancient wood, dark fruit, cooked must, sweet spices and gentle balsamic notes. On the palate it is full, round and extraordinarily persistent, with a refined balance between sweetness and acidity that only decades of aging can create.
Recommended Use
Best enjoyed pure, like a fine meditation spirit. Used raw, it elevates high quality dishes: aged Parmigiano Reggiano, refined risottos, premium meats, important fish, eggs and grilled vegetables. Magnificent on essential desserts such as fiordilatte gelato, panna cotta, strawberries and berries. Just a few drops transform any dish into a memorable tasting experience.

Il Verde is one of the highest peaks of our acetaia. It is an extra aged Traditional Balsamic Vinegar of Modena PDO that matures slowly over decades, passing through multiple generations within our historic cask sets.

The journey begins with grape must cooked over direct fire, according to Modena’s oldest tradition. From there, the transformation unfolds naturally over time inside small barrels of chestnut, oak, mulberry, cherry and juniper. Time moves without haste, allowing the vinegar to reach a density and aromatic depth that only very long aging can deliver.

Although not the oldest balsamic in our collection, Il Verde stands among the highest expressions of excellence, a level that for many producers would represent the pinnacle of their range.

The depth achieved after many decades of slow, natural maturation makes it a true rarity, sealed exclusively in the iconic Giugiaro designed bottle certified by the Consortium.
